For the Dough:
- 3 cups all-purpose flour
- 2 1/4 tsp (1 packet) active dry yeast
- 1/4 cup granulated sugar
- 1/2 tsp salt
- 3/4 cup warm milk (110°F / 45°C)
- 1 large egg
- 4 tbsp unsalted butter, melted
- 1 tsp vanilla extract
For the Ricotta Blueberry Filling:
- 1 cup ricotta cheese (whole milk for best texture!)
- 1/4 cup powdered sugar
- 1 tsp lemon zest (adds brightness!)
- 1/2 tsp vanilla extract
- 3/4 cup wild blueberries (fresh or frozen, if frozen do not thaw!)
For the Topping:
- 1 egg yolk + 1 tbsp milk (for egg wash)
- 2 tbsp coarse sugar (optional, for crunch!)
- Powdered sugar (for dusting, optional)
Instructions
Step 1: Prepare the Dough
- In a small bowl, mix warm milk, yeast, and 1 tsp sugar. Let sit for 5-10 minutes until foamy.
- In a large mixing bowl, combine flour, remaining sugar, and salt.
- Add melted butter, egg, vanilla extract, and yeast mixture. Mix until a soft dough forms.
- Knead for 8-10 minutes until smooth and elastic. (If sticky, add 1 tbsp flour at a time.)
- Place dough in a greased bowl, cover, and let rise for 1-1.5 hours, or until doubled in size.
Step 2: Make the Filling
- In a small bowl, mix ricotta, powdered sugar, lemon zest, and vanilla until smooth.
- Gently fold in wild blueberries, being careful not to crush them.
Step 3: Shape the Buns
- Punch down the dough and divide into 12 equal pieces.
- Flatten each piece into a small disc and place 1 tbsp of filling in the center.
- Pinch the edges together to seal and form a smooth ball.
- Place buns seam-side down on a parchment-lined baking sheet.
Step 4: Bake the Buns
- Preheat oven to 350°F (175°C).
- Brush buns with egg wash and sprinkle with coarse sugar.
- Bake for 20-25 minutes, until golden brown.
- Let cool for 10 minutes, then dust with powdered sugar if desired.
