A simple and flavorful whole baked fish seasoned with herbs, lemon, and garlic — tender, flaky, and perfect for an impressive yet easy dinner.

- 1 whole fish (about 2–3 pounds), cleaned and scaled (such as snapper, sea bass, or trout)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, thinly sliced
- 2 sprigs fresh rosemary or thyme
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
- Pat the fish dry with paper towels. Score the fish by making 2–3 shallow cuts on each side.
- Rub the fish inside and out with olive oil, minced garlic, salt, and pepper.
- Stuff the cavity with lemon slices and fresh herbs.
- Place additional lemon slices on top of the fish.
- Bake for 20–25 minutes, or until the fish is opaque and flakes easily with a fork (internal temperature should reach 145°F / 63°C).
- Garnish with fresh parsley and serve with extra lemon wedges if desired.
