Scale
- 2 tbsp unsalted butter
- 3 cloves garlic, minced
- 2 tbsp all-purpose flour
- 1 cup whole milk (or half & half for extra creaminess)
- 1/4 cup grated Parmesan cheese
- 1/2 tsp salt (adjust to taste)
- 1/2 tsp black pepper
- 1/2 tsp dried oregano (optional)
- 1/4 tsp crushed red pepper flakes (optional, for spice)
Instructions
- Melt the Butter – In a saucepan over medium heat, melt the butter.
- Sauté the Garlic – Add the minced garlic and cook for 30 seconds, stirring constantly, until fragrant.
- Make a Roux – Whisk in the flour and cook for 1 minute to remove the raw flour taste.
- Add the Milk – Gradually whisk in the milk, stirring continuously to prevent lumps. Simmer for 2-3 minutes until thickened.
- Add the Cheese & Seasonings – Stir in Parmesan, salt, pepper, oregano, and red pepper flakes (if using). Cook until the cheese melts and the sauce is smooth.
- Cool & Use – Remove from heat. Let cool slightly before spreading on pizza dough.
Notes
- For a thinner sauce, add more milk until it reaches your desired consistency.
- Want extra cheesiness? Stir in ¼ cup mozzarella before removing from heat.
- Store leftovers in an airtight container in the fridge for up to 4 days. Reheat gently before using.
- Perfect for more than just pizza! Use it for pasta, dipping breadsticks, or drizzling over roasted veggies.
