Description

These White Chocolate Cranberry Pecan Clusters are the perfect combination of sweet, tart, and crunchy. Creamy white chocolate envelops toasted pecans and chewy dried cranberries, making them a festive and easy treat for the holidays, a snack table, or gift-giving.   • 12 oz (340 g) white chocolate chips (or chopped white chocolate)
  • 1 cup (120 g) toasted pecans, roughly chopped
  • 1/2 cup (60 g) dried cranberries
  • 1/2 teaspoon vanilla extract (optional)
  • 1 pinch of sea salt (optional, for sprinkling)

Instructions

  1. Toast the pecans:
    • Preheat the oven to 350°F (175°C). Spread the pecans on a baking sheet and toast for 5–7 minutes, until fragrant. Let them cool completely before using.
  2. Melt the white chocolate:
    • Place the white chocolate in a microwave-safe bowl. Microwave in 20-second intervals, stirring in between, until smooth and fully melted. Be careful not to overheat as white chocolate can seize easily.
    • (Alternatively, use a double boiler to melt the chocolate gently on the stove.)
  3. Combine ingredients:
    • Stir the toasted pecans and dried cranberries into the melted white chocolate until they are fully coated. Add the vanilla extract if using.
  4. Form the clusters:
    • Line a baking sheet with parchment paper or a silicone mat. Drop spoonfuls of the chocolate mixture onto the sheet, forming small clusters.
    • Sprinkle a pinch of sea salt on top of each cluster, if desired, for a sweet-salty flavor.
  5. Set the clusters:
    • Place the baking sheet in the refrigerator for at least 20–30 minutes, or until the chocolate is fully set.
  6. Serve and store:
    • Once set, remove the clusters from the parchment paper and transfer them to an airtight container. Store at room temperature for up to 1 week or in the refrigerator for up to 2 weeks.
