These soft and buttery blondies are packed with creamy white chocolate and have a perfectly chewy texture. They’re easy to make and perfect for dessert or a sweet snack!

- 1/2 cup (115g) unsalted butter, melted
- 3/4 cup (150g) brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup (125g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (90g) white chocolate chips (plus extra for topping)
- 1/4 cup (30g) chopped nuts (optional, for crunch)
Instructions
- Preheat oven to 350°F (175°C). Grease or line an 8×8-inch (20x20cm) baking pan with parchment paper.
- Mix wet ingredients: In a mixing bowl, whisk melted butter and brown sugar until smooth. Stir in the egg and vanilla extract.
- Add dry ingredients: Sift in flour, baking powder, and salt. Gently fold until just combined.
- Stir in mix-ins: Fold in white chocolate chips and nuts (if using).
- Bake: Spread the batter evenly into the prepared pan. Sprinkle extra white chocolate chips on top. Bake for 20–25 minutes, or until the edges are golden and the center is set.
- Cool & slice: Let cool in the pan for at least 15 minutes, then slice into squares. Enjoy!
Notes
- Swap white chocolate chips for dark or milk chocolate if preferred.
- Add ½ teaspoon cinnamon for a warm spice twist.
- Store in an airtight container at room temperature for up to 4 days or freeze for up to 3 months.
