Description

White Chicken Chili is a hearty, comforting dish made with tender shredded chicken, white beans, green chilies, and a creamy, flavorful broth. It’s a cozy one-pot meal perfect for cold nights or game day gatherings.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground coriander (optional)
  • 2 (4 oz) cans diced green chilies
  • 2 cups cooked shredded chicken (rotisserie or poached)
  • 2 (15 oz) cans white beans, drained and rinsed
  • 2 1/2 cups chicken broth
  • 1/2 cup sour cream
  • 1/2 cup heavy cream or half-and-half
  • Salt and pepper to taste
  • 1/2 cup chopped fresh cilantro (for garnish)
  • Optional toppings: shredded cheese, avocado, tortilla strips, lime wedges

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Stir in garlic, cumin, oregano, chili powder, and coriander. Cook for 1 minute until fragrant.
  3. Add green chilies, shredded chicken, white beans, and chicken broth. Bring to a simmer and cook for 15 minutes.
  4. Reduce heat to low, then stir in sour cream and heavy cream. Heat through without boiling.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with cilantro and any desired toppings.

Notes

  • For a thicker chili, mash some of the beans before adding or blend a small portion of the soup and return to the pot.
  • Can be made ahead and tastes even better the next day.
  • Freeze leftovers in an airtight container for up to 2 months.
