- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground coriander (optional)
- 2 (4 oz) cans diced green chilies
- 2 cups cooked shredded chicken (rotisserie or poached)
- 2 (15 oz) cans white beans, drained and rinsed
- 2 1/2 cups chicken broth
- 1/2 cup sour cream
- 1/2 cup heavy cream or half-and-half
- Salt and pepper to taste
- 1/2 cup chopped fresh cilantro (for garnish)
- Optional toppings: shredded cheese, avocado, tortilla strips, lime wedges
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
- Stir in garlic, cumin, oregano, chili powder, and coriander. Cook for 1 minute until fragrant.
- Add green chilies, shredded chicken, white beans, and chicken broth. Bring to a simmer and cook for 15 minutes.
- Reduce heat to low, then stir in sour cream and heavy cream. Heat through without boiling.
- Season with salt and pepper to taste.
- Serve hot, garnished with cilantro and any desired toppings.
Notes
- For a thicker chili, mash some of the beans before adding or blend a small portion of the soup and return to the pot.
- Can be made ahead and tastes even better the next day.
- Freeze leftovers in an airtight container for up to 2 months.
