Description

Whipped Ricotta Toast with Marinated Tomatoes and Lemon is a fresh, elegant appetizer or light meal featuring creamy ricotta spread on crusty toast, topped with juicy marinated cherry tomatoes and a bright lemon finish.


Ingredients

  • 1 cup whole milk ricotta cheese
  • 1 tbsp olive oil (plus more for drizzling)
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 cup cherry tomatoes, halved
  • 1 tsp balsamic vinegar
  • 1 clove garlic, minced
  • 1 tsp chopped fresh basil or thyme
  • Salt and black pepper to taste
  • 4 slices crusty sourdough or country bread, toasted
  • Optional: red pepper flakes for garnish

Instructions

  1. In a small bowl, combine halved tomatoes, garlic, balsamic vinegar, olive oil, herbs, salt, and pepper. Let marinate at room temperature for at least 15 minutes.
  2. Meanwhile, in a separate bowl, whisk or whip ricotta with lemon zest, lemon juice, 1 tbsp olive oil, and a pinch of salt until light and fluffy.
  3. Toast bread slices until golden and crisp.
  4. Spread a generous layer of whipped ricotta over each slice of toast.
  5. Top with marinated tomatoes and spoon over some of the marinade.
  6. Drizzle with olive oil and sprinkle with red pepper flakes if using. Serve immediately.

Notes

  • Use whipped ricotta as a dip or spread for other dishes.
  • Swap cherry tomatoes for heirloom slices when in season.
