- 1 cup whole milk ricotta cheese
- 1 tbsp olive oil (plus more for drizzling)
- 1 tsp lemon zest
- 1 tbsp lemon juice
- 1 cup cherry tomatoes, halved
- 1 tsp balsamic vinegar
- 1 clove garlic, minced
- 1 tsp chopped fresh basil or thyme
- Salt and black pepper to taste
- 4 slices crusty sourdough or country bread, toasted
- Optional: red pepper flakes for garnish
Instructions
- In a small bowl, combine halved tomatoes, garlic, balsamic vinegar, olive oil, herbs, salt, and pepper. Let marinate at room temperature for at least 15 minutes.
- Meanwhile, in a separate bowl, whisk or whip ricotta with lemon zest, lemon juice, 1 tbsp olive oil, and a pinch of salt until light and fluffy.
- Toast bread slices until golden and crisp.
- Spread a generous layer of whipped ricotta over each slice of toast.
- Top with marinated tomatoes and spoon over some of the marinade.
- Drizzle with olive oil and sprinkle with red pepper flakes if using. Serve immediately.
