Description

Western Omelet Quiche combines all the flavors of a classic diner-style omelet—ham, bell peppers, onions, and cheese—baked into a savory and satisfying quiche perfect for breakfast or brunch.

Ingredients

Units Scale
  • 1 9-inch pie crust (store-bought or homemade)
  • 6 large eggs
  • 1 cup milk or half-and-half
  • 1 cup diced cooked ham
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped onion
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F (190°C). Place the pie crust into a 9-inch pie dish and set aside.
  2. In a skillet over medium heat, sauté the bell peppers and onions until softened, about 5 minutes. Let cool slightly.
  3. In a large bowl, whisk together eggs, milk, salt, and pepper.
  4. Spread ham, sautéed vegetables, and cheese evenly in the prepared pie crust.
  5. Pour the egg mixture over the top, ensuring it covers all the fillings.
  6. Bake for 35–40 minutes, or until the center is set and the top is lightly golden.
  7. Let rest for 5–10 minutes before slicing and serving.

Notes

  • Substitute other cheeses like Monterey Jack or Swiss if desired.
  • For a crustless version, omit the crust and grease the pie dish well.
  • Can be made ahead and reheated for a quick breakfast.
