Ingredients
For the Watermelon Fries:

1 small seedless watermelon (or half of a large one)

For the Coconut Lime Dip:

1/2 cup canned coconut cream (or thick part from chilled coconut milk)

1/2 cup Greek yogurt or plant-based yogurt

Instructions

Prep the watermelon:
Slice the watermelon into 1-inch thick rounds, remove the rind, then cut into stick shapes (like fries). Arrange on a plate or platter. -
Make the dip:
In a small bowl, whisk together coconut cream, yogurt, honey or maple syrup, lime juice, lime zest, and a tiny pinch of salt. Mix until smooth and creamy. Chill in the fridge until ready to serve. -
Serve:
Sprinkle lime zest or a pinch of sea salt over the watermelon fries if desired. Serve cold with the coconut lime dip on the side.
