Description

These watermelon “fries” are juicy sticks of fresh watermelon served with a creamy coconut lime dip that’s sweet, tangy, and refreshing. It’s a no-bake snack or appetizer that’s kid-friendly, naturally gluten-free, and totally Insta-worthy.

Ingredients

For the Watermelon Fries:

  • 1 small seedless watermelon (or half of a large one)

  • Pinch of sea salt (optional)

  • Zest of 1 lime (optional, for garnish)

For the Coconut Lime Dip:

  • 1/2 cup canned coconut cream (or thick part from chilled coconut milk)

  • 1/2 cup Greek yogurt or plant-based yogurt

  • 1-2 tablespoons honey or maple syrup (adjust to taste)

  • 1 teaspoon fresh lime juice

  • Zest of 1 lime

  • Pinch of salt

Instructions

  1. Prep the watermelon:
Slice the watermelon into 1-inch thick rounds, remove the rind, then cut into stick shapes (like fries). Arrange on a plate or platter.

  2. Make the dip:
In a small bowl, whisk together coconut cream, yogurt, honey or maple syrup, lime juice, lime zest, and a tiny pinch of salt. Mix until smooth and creamy. Chill in the fridge until ready to serve.

  3. Serve:
Sprinkle lime zest or a pinch of sea salt over the watermelon fries if desired. Serve cold with the coconut lime dip on the side.

Notes

  • Keep the dip chilled until serving for the best texture.

  • Want a dairy-free version? Just use coconut yogurt instead of Greek yogurt.

  • You can also sprinkle chili-lime seasoning (like Tajín) over the watermelon for a sweet-spicy twist.
