Description

This refreshing summer salad combines sweet watermelon, juicy blueberries, salty feta cheese, and fresh mint. It’s light, colorful, and perfect for picnics, BBQs, or a quick side dish on a hot day.


Ingredients

  • 4 cups watermelon, cubed

  • 1 cup fresh blueberries

  • 1/2 cup crumbled feta cheese

  • 2 tablespoons fresh mint leaves, chopped

  • 1 tablespoon extra virgin olive oil

  • 1 tablespoon fresh lime juice

  • Pinch of salt (optional)


Instructions

  1. In a large bowl, combine the cubed watermelon and blueberries.

  2. Add the crumbled feta and chopped mint.

  3. Drizzle with olive oil and lime juice.

  4. Gently toss everything together until well combined.

  5. Chill for 15–20 minutes before serving for best flavor.

 



Notes

  • Use seedless watermelon for easy prep.

  • Add a few thin slices of red onion for a savory twist.

  • Can be made a few hours ahead, but wait to add feta until just before serving to keep it fresh.
