Description

Waffle Cake is a unique and fun dessert made by layering waffles with luscious fillings like whipped cream, fruit, or chocolate ganache. Perfect for celebrations or a whimsical treat, this no-bake dessert is as delightful to eat as it is to assemble!

Ingredients

Units Scale

For the Waffles (or use store-bought):

  • 2 cups (250 g) all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups (420 ml) milk
  • 1/3 cup (75 g) unsalted butter, melted
  • 1 teaspoon vanilla extract

For the Fillings (Customize to Taste):

  • 2 cups (480 ml) heavy whipping cream
  • 1/4 cup (30 g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup (120 g) chocolate ganache (melted chocolate + heavy cream)
  • Fresh fruit (e.g., strawberries, raspberries, bananas)
  • Nutella or peanut butter (optional)

For Topping:

  • Powdered sugar for dusting
  • Fresh fruit
  • Chocolate shavings or sprinkles

Instructions

1. Make the Waffles:

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk the eggs, milk, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined (a few lumps are okay).
  3. Preheat your waffle maker and cook the waffles according to the manufacturer’s instructions. Let the waffles cool completely on a wire rack.

2. Prepare the Whipped Cream:

  1. In a chilled mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.

3. Assemble the Waffle Cake:

  1. Place one waffle on a serving plate. Spread a layer of whipped cream over the waffle, then drizzle with chocolate ganache or Nutella. Add a layer of fresh fruit if desired.
  2. Repeat the process, stacking waffles and fillings until all waffles are used. Top the final waffle with a generous dollop of whipped cream and garnish with fruit, powdered sugar, and chocolate shavings.

4. Chill and Serve:

  1. For best results, refrigerate the waffle cake for 30 minutes to allow the layers to set before slicing. Serve chilled or at room temperature.

Notes

  • For a shortcut, use frozen waffles or pre-made Belgian waffles.
  • Customize the layers with your favorite flavors, like cream cheese frosting, caramel, or pudding.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
