- 1 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup artichoke hearts, chopped
- 1/4 cup red onion, finely chopped
- 1/2 cup banana peppers, sliced
- 1/4 cup black olives, sliced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup vegan provolone or mozzarella shreds (optional)
Instructions
- In a large mixing bowl, combine tomatoes, cucumber, bell pepper, artichokes, red onion, banana peppers, olives, and parsley.
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper.
- Pour the dressing over the vegetable mixture and toss until everything is well coated.
- If using, fold in vegan cheese shreds.
- Cover and refrigerate for at least 30 minutes to let flavors meld.
- Serve chilled with toasted baguette slices, pita chips, or crackers.
