- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 tbsp whole milk
- 1 tbsp pure vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt; set aside.
- In a large bowl, cream butter and sugar together until light and fluffy.
- Beat in the egg, then add milk and vanilla extract; mix until smooth.
- Gradually add the dry ingredients, mixing until just combined.
- Drop rounded teaspoons of batter onto prepared baking sheets, spacing about 2 inches apart.
- Bake for 12-15 minutes, or until edges are lightly golden.
- Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Store vanilla wafers in an airtight container for up to 1 week.
- Use these wafers for banana pudding or crush them for a pie crust.
- For extra vanilla flavor, use vanilla bean paste instead of extract.
