Description

Classic homemade vanilla wafers that are crisp, lightly sweet, and full of real vanilla flavor. Perfect for snacking, banana pudding, or pie crusts.

Ingredients

Units Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tbsp whole milk
  • 1 tbsp pure vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
  3. In a large bowl, cream butter and sugar together until light and fluffy.
  4. Beat in the egg, then add milk and vanilla extract; mix until smooth.
  5. Gradually add the dry ingredients, mixing until just combined.
  6. Drop rounded teaspoons of batter onto prepared baking sheets, spacing about 2 inches apart.
  7. Bake for 12-15 minutes, or until edges are lightly golden.
  8. Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Store vanilla wafers in an airtight container for up to 1 week.
  • Use these wafers for banana pudding or crush them for a pie crust.
  • For extra vanilla flavor, use vanilla bean paste instead of extract.
