Description

Vanilla Custard Fruit Slices are a delightful dessert made with a crisp pastry base, smooth vanilla custard, and topped with a colorful assortment of fresh fruits for a refreshing finish.

Ingredients

Units Scale
  • 1 sheet puff pastry, thawed
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 2 teaspoons vanilla extract
  • 1 tablespoon unsalted butter
  • 1/4 cup apricot jam (optional, for glaze)
  • Assorted fresh fruits (e.g., strawberries, kiwi, blueberries, mango, grapes), sliced

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out puff pastry and prick all over with a fork. Bake for 12–15 minutes or until golden and puffed. Let cool completely.
  3. In a saucepan, heat milk over medium heat until just simmering.
  4. In a bowl, whisk together sugar, cornstarch, and egg yolks until pale and smooth.
  5. Slowly pour the hot milk into the egg mixture, whisking constantly to temper. Return mixture to the saucepan.
  6. Cook over medium heat, whisking constantly, until thickened (about 3–5 minutes). Remove from heat and stir in vanilla extract and butter.
  7. Let custard cool slightly, then spread evenly over the baked puff pastry base.
  8. Arrange sliced fresh fruits on top of the custard in a decorative pattern.
  9. If desired, warm apricot jam and brush over the fruit for a glossy finish.
  10. Chill in the fridge for at least 1 hour before slicing and serving.

Notes

  • Use store-bought custard for a quicker version.
  • Customize with seasonal fruits or your favorites.
  • Serve within a few hours for best texture and freshness.
