- 2 cups whole milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 4 large egg yolks
- 2 teaspoons vanilla extract
- 1 tablespoon unsalted butter
- 1/4 cup apricot jam (optional, for glaze)
- Assorted fresh fruits (e.g., strawberries, kiwi, blueberries, mango, grapes), sliced
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out puff pastry and prick all over with a fork. Bake for 12–15 minutes or until golden and puffed. Let cool completely.
- In a saucepan, heat milk over medium heat until just simmering.
- In a bowl, whisk together sugar, cornstarch, and egg yolks until pale and smooth.
- Slowly pour the hot milk into the egg mixture, whisking constantly to temper. Return mixture to the saucepan.
- Cook over medium heat, whisking constantly, until thickened (about 3–5 minutes). Remove from heat and stir in vanilla extract and butter.
- Let custard cool slightly, then spread evenly over the baked puff pastry base.
- Arrange sliced fresh fruits on top of the custard in a decorative pattern.
- If desired, warm apricot jam and brush over the fruit for a glossy finish.
- Chill in the fridge for at least 1 hour before slicing and serving.
