Instructions
Step 1: Bake the Cake
- Prepare the red velvet cake according to package instructions.
- Let the cake cool completely, then crumble it into fine crumbs in a large bowl.
Step 2: Make the Cake Ball Mixture
- In a separate bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
- Add the mixture to the crumbled cake and mix until a soft, dough-like consistency forms.
Step 3: Roll & Chill
- Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
- Refrigerate for 30-60 minutes, or freeze for 15 minutes, until firm.
Step 4: Coat with Chocolate
- Melt the white chocolate in the microwave in 30-second intervals, stirring until smooth.
- If needed, stir in 1 tbsp coconut oil or shortening for a smoother texture.
- Dip each cake ball into the melted chocolate using a fork or toothpick, letting excess drip off.
- Place coated cake balls back on parchment paper and immediately add Valentine’s sprinkles before the chocolate sets.
Step 5: Chill & Serve
- Let the cake balls set at room temperature for 15 minutes, or refrigerate for 10 minutes until firm.
