Instructions

Step 1: Bake the Cake

  1. Prepare the red velvet cake according to package instructions.
  2. Let the cake cool completely, then crumble it into fine crumbs in a large bowl.

Step 2: Make the Cake Ball Mixture

  1. In a separate bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Add the mixture to the crumbled cake and mix until a soft, dough-like consistency forms.

Step 3: Roll & Chill

  1. Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
  2. Refrigerate for 30-60 minutes, or freeze for 15 minutes, until firm.

Step 4: Coat with Chocolate

  1. Melt the white chocolate in the microwave in 30-second intervals, stirring until smooth.
  2. If needed, stir in 1 tbsp coconut oil or shortening for a smoother texture.
  3. Dip each cake ball into the melted chocolate using a fork or toothpick, letting excess drip off.
  4. Place coated cake balls back on parchment paper and immediately add Valentine’s sprinkles before the chocolate sets.
