- 1 package (3 oz) berry blue gelatin
- 1 package (3 oz) strawberry or raspberry gelatin
- 2 cups boiling water, divided
- 1 container (8 oz) whipped topping (like Cool Whip), thawed
- Food coloring (pink, blue, purple – optional)
- Rainbow or unicorn-themed sprinkles
Instructions
- Preheat oven to 350°F (175°C) and prepare a 9×13 inch baking dish.
- Make the white cake according to package instructions and bake in the prepared dish. Let it cool for 15–20 minutes.
- Using the handle of a wooden spoon, poke holes all over the cooled cake.
- In separate bowls, mix each gelatin flavor with 1 cup boiling water until dissolved.
- Carefully spoon or pour the gelatin mixtures into different holes in the cake to create a colorful effect.
- Refrigerate the cake for at least 2 hours to allow gelatin to set.
- If desired, tint whipped topping with food coloring for a pastel effect, or leave white.
- Spread whipped topping over the chilled cake and decorate with unicorn or rainbow sprinkles.
- Chill until ready to serve.
