Ingredients

1 pint cherry tomatoes, halved

1 (14 oz) can marinated artichoke hearts, drained and quartered

1/4 red onion, thinly sliced

1/4 cup fresh basil leaves, chopped or torn

2 tablespoons fresh parsley, chopped

2 tablespoons extra virgin olive oil

1 tablespoon red wine vinegar (or lemon juice)

Salt and black pepper to taste

Optional: 1/4 cup shaved Parmesan cheese
Instructions

In a large bowl, combine cherry tomatoes, artichoke hearts, and red onion.

Add chopped basil and parsley.

Drizzle with olive oil and red wine vinegar.

Season with salt and pepper, and toss gently to combine.

Top with shaved Parmesan if using.

Let sit for 10–15 minutes before serving to let the flavors meld.

For more flavor, use the marinated oil from the artichoke jar in place of regular olive oil.
