Description

These turkey meatballs are infused with the rich flavor of sundried tomatoes and fresh basil, making them a delicious and healthy option for any meal. Perfect as a main dish or an appetizer.


Ingredients

  • 1 lb ground turkey
  • 1/3 cup chopped sundried tomatoes (packed in oil, drained)
  • 1/4 cup chopped fresh basil
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil (for cooking)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground turkey, chopped sundried tomatoes, basil, Parmesan cheese, breadcrumbs, egg, garlic, salt, and pepper.
  3. Mix until just combined; do not overwork the mixture.
  4. Form the mixture into 1.5-inch meatballs and place them on the prepared baking sheet.
  5. Brush or drizzle the meatballs with olive oil.
  6. Bake for 18–20 minutes, or until meatballs are cooked through and golden brown.

  • You can substitute dried basil if fresh is unavailable, but fresh gives better flavor.
