- 1 lb ground turkey
- 1/3 cup chopped sundried tomatoes (packed in oil, drained)
- 1/4 cup chopped fresh basil
- 1/4 cup grated Parmesan cheese
- 1/3 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil (for cooking)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine ground turkey, chopped sundried tomatoes, basil, Parmesan cheese, breadcrumbs, egg, garlic, salt, and pepper.
- Mix until just combined; do not overwork the mixture.
- Form the mixture into 1.5-inch meatballs and place them on the prepared baking sheet.
- Brush or drizzle the meatballs with olive oil.
- Bake for 18–20 minutes, or until meatballs are cooked through and golden brown.
- Serve warm with your favorite sauce, over pasta, or as an appetizer.
Notes
- You can substitute dried basil if fresh is unavailable, but fresh gives better flavor.
- Use lean ground turkey for a lighter option or ground chicken as an alternative.
- Make a double batch and freeze extras for quick meals later.
