- 1 pound lion’s mane mushrooms, torn into bite-sized pieces
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1 tablespoon soy sauce or tamari
- Fresh parsley for garnish (optional)
Instructions
- Preheat Traeger grill to 225°F (107°C) using hickory or oak pellets for a deep smoky flavor.
- In a large bowl, gently toss the lion’s mane mushrooms with olive oil, garlic powder, smoked paprika, salt, pepper, and soy sauce.
- Spread the seasoned mushrooms in a single layer on a grill-safe baking tray or directly on a grill mat.
- Smoke the mushrooms for 45 minutes to 1 hour, stirring halfway through, until they are tender and slightly crispy on the edges.
- Remove from grill, garnish with fresh parsley if desired, and serve warm.
Notes
- Do not overcoat with oil to allow mushrooms to develop a nice smoky texture.
- Serve as a side dish, or use in sandwiches, salads, or tacos.
- Add a squeeze of lemon after smoking for a bright, fresh finish.
- For an extra flavor punch, drizzle with a little truffle oil before serving.
