Description

This easy and flavorful turkey sandwich is built on Trader Joe’s sun-dried tomato focaccia bread and layered with oven-roasted turkey, creamy cheese, fresh greens, and a zippy spread. It’s perfect for lunch, picnics, or a quick, satisfying dinner.


Ingredients

  • 1 loaf Trader Joe’s Sun-Dried Tomato Focaccia, halved horizontally

  • 4-6 oz sliced oven-roasted turkey breast (TJ’s Herb Turkey or preferred)

  • 2-3 slices provolone or mozzarella cheese

  • 1/2 avocado, sliced or mashed

  • Handful of arugula or baby spinach

  • 2 tablespoons mayo or aioli

  • 1 teaspoon Dijon mustard (optional)

  • Salt and pepper, to taste

  • Optional: thinly sliced red onion or tomato


Instructions

  • Prep the Bread:
    Slice the sun-dried tomato focaccia in half horizontally. Lightly toast, if desired, for a warm, crispy bite.

  • Assemble the Sandwich:
    Spread mayo (and mustard, if using) on one side of the bread. Add mashed or sliced avocado, then layer on cheese, turkey, arugula, and any optional toppings like red onion or tomato.

 

  • Finish and Serve:
    Top with the other piece of bread. Slice in half and serve immediately—or wrap for lunch on the go.


Notes

  • For extra flavor, use Trader Joe’s Garlic Spread Dip or a balsamic glaze drizzle.

  • Swap turkey for grilled chicken or roasted veggies for a vegetarian version.
