Instructions
- In a large bowl, combine sliced cucumber, tomatoes, and red onion.
- Add chopped herbs and optional spices if using.
- In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the vegetables and toss gently to coat.
- Let sit for 10–15 minutes before serving to enhance the flavors.

- Best served fresh but can be refrigerated for a few hours.
- Use heirloom or cherry tomatoes for variety and color.
- For an Indian twist, sprinkle with chaat masala or black salt.
