Description

These Tiramisu Sandwich Cookies are made with soft espresso-flavored cookies, sandwiched with a creamy mascarpone filling, and dusted with cocoa powder for that signature tiramisu taste. They’re perfect for coffee lovers and special occasions!

  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon instant espresso powder (dissolved in 1 tablespoon hot water)

For the Mascarpone Filling:

  • 4 oz mascarpone cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon instant espresso powder (optional, for extra coffee flavor)
  • 1/4 cup heavy whipping cream

For Garnish:

  • Cocoa powder, for dusting
  • Chocolate shavings (optional)

Instructions

Step 1: Make the Cookies

  1. Preheat & Prep:

    • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients:

    • In a bowl, whisk together flour, baking powder, and salt.
  3. Cream Butter & Sugar:

    • In a large bowl, beat butter and sugar until light and fluffy (about 2 minutes).
  4. Add Wet Ingredients:

    • Mix in egg, vanilla extract, and dissolved espresso until combined.
  5. Combine Wet & Dry:

    • Gradually add the dry ingredients, mixing until just combined.
  6. Scoop & Bake:

    • Drop 1-inch spoonfuls of dough onto the baking sheet, spacing 2 inches apart.
    • Bake for 8-10 minutes, or until the edges are set.
    • Let cool completely before filling.

Step 2: Make the Mascarpone Filling

  1. Beat the Mascarpone:

    • In a bowl, beat mascarpone cheese, powdered sugar, vanilla extract, and espresso powder until smooth.
  2. Whip the Cream:

    • In a separate bowl, whip heavy cream until soft peaks form.
  3. Combine:

    • Gently fold the whipped cream into the mascarpone mixture until light and fluffy.

Step 3: Assemble the Cookies

  1. Pipe or Spoon Filling:
  • Spread or pipe a generous amount of mascarpone filling onto the bottom of one cookie.
  • Top with another cookie and gently press to sandwich.

  • Lightly dust the tops with cocoa powder for the signature tiramisu touch.

  • Want a boozy twist? Add 1 teaspoon of Kahlúa or rum to the mascarpone filling.
