- 1 teaspoon instant espresso powder (dissolved in 1 tablespoon hot water)
For the Mascarpone Filling:
- 4 oz mascarpone cheese, softened
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon instant espresso powder (optional, for extra coffee flavor)
- 1/4 cup heavy whipping cream
For Garnish:
- Cocoa powder, for dusting
- Chocolate shavings (optional)

Step 1: Make the Cookies

Preheat & Prep:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Mix Dry Ingredients:
- In a bowl, whisk together flour, baking powder, and salt.

Cream Butter & Sugar:
- In a large bowl, beat butter and sugar until light and fluffy (about 2 minutes).

Add Wet Ingredients:
- Mix in egg, vanilla extract, and dissolved espresso until combined.

Combine Wet & Dry:
- Gradually add the dry ingredients, mixing until just combined.

Scoop & Bake:
- Drop 1-inch spoonfuls of dough onto the baking sheet, spacing 2 inches apart.
- Bake for 8-10 minutes, or until the edges are set.
- Let cool completely before filling.
Step 2: Make the Mascarpone Filling

Beat the Mascarpone:
- In a bowl, beat mascarpone cheese, powdered sugar, vanilla extract, and espresso powder until smooth.

Whip the Cream:
- In a separate bowl, whip heavy cream until soft peaks form.

Combine:
- Gently fold the whipped cream into the mascarpone mixture until light and fluffy.
Step 3: Assemble the Cookies
- Pipe or Spoon Filling:
- Spread or pipe a generous amount of mascarpone filling onto the bottom of one cookie.
- Top with another cookie and gently press to sandwich.
- Dust with Cocoa Powder:
- Lightly dust the tops with cocoa powder for the signature tiramisu touch.
- Optionally, sprinkle with chocolate shavings.
- Chill & Serve:
- Refrigerate for 30 minutes before serving for the best texture.
Notes
- Want a boozy twist? Add 1 teaspoon of Kahlúa or rum to the mascarpone filling.
- For extra softness, store cookies in an airtight container overnight—the filling will slightly soften them, just like tiramisu!
