- 1 lb ground beef (or Italian sausage)
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken or beef broth (low-sodium)
- 1 can (15 oz) crushed tomatoes
- 1 can (15 oz) diced tomatoes
- 2 tbsp tomato paste
- 1 tsp Italian seasoning
- 1/2 tsp crushed red pepper flakes (optional, for spice)
- Salt and black pepper, to taste
- 8 oz lasagna noodles, broken into pieces
- 1/2 cup whole milk ricotta cheese
- 1/2 cup shredded mozzarella cheese
- Fresh basil or parsley, chopped (for garnish)
- Grated Parmesan cheese (for garnish)
Instructions
- Cook the Meat: In a large pot, heat olive oil over medium heat. Add the ground beef, breaking it up with a spoon, and cook until browned. Drain any excess fat.
- Sauté Aromatics: Add the diced onion and minced garlic to the pot, cooking until softened, about 3-4 minutes.
- Add Tomatoes and Broth: Stir in the crushed tomatoes, diced tomatoes, tomato paste, Italian seasoning, crushed red pepper flakes (if using), salt, and black pepper. Pour in the broth and bring the mixture to a simmer.
- Simmer Soup: Let the soup simmer for 15 minutes to allow the flavors to meld.
- Add Noodles: Add the broken lasagna noodles to the pot and cook for 8-10 minutes, or until they’re tender.
- Prepare Cheese Mixture: In a small bowl, mix together the ricotta and mozzarella cheeses.
- Serve: Ladle the soup into bowls, topping each with a spoonful of the ricotta-mozzarella mixture. Garnish with fresh basil or parsley and a sprinkle of Parmesan cheese.
