This Lasagna Soup is everything you love about classic lasagna, but in a comforting, slurpable bowl! Filled with ground beef, noodles, tomatoes, and Italian herbs, it’s topped with a dollop of creamy ricotta and melted mozzarella for the ultimate cozy meal.   • 1 lb ground beef (or Italian sausage)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken or beef broth (low-sodium)
  • 1 can (15 oz) crushed tomatoes
  • 1 can (15 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional, for spice)
  • Salt and black pepper, to taste
  • 8 oz lasagna noodles, broken into pieces
  • 1/2 cup whole milk ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • Fresh basil or parsley, chopped (for garnish)
  • Grated Parmesan cheese (for garnish)

Instructions

  • Cook the Meat: In a large pot, heat olive oil over medium heat. Add the ground beef, breaking it up with a spoon, and cook until browned. Drain any excess fat.
  • Sauté Aromatics: Add the diced onion and minced garlic to the pot, cooking until softened, about 3-4 minutes.
  • Add Tomatoes and Broth: Stir in the crushed tomatoes, diced tomatoes, tomato paste, Italian seasoning, crushed red pepper flakes (if using), salt, and black pepper. Pour in the broth and bring the mixture to a simmer.
  • Simmer Soup: Let the soup simmer for 15 minutes to allow the flavors to meld.
  • Add Noodles: Add the broken lasagna noodles to the pot and cook for 8-10 minutes, or until they’re tender.
  • Prepare Cheese Mixture: In a small bowl, mix together the ricotta and mozzarella cheeses.
  • Serve: Ladle the soup into bowls, topping each with a spoonful of the ricotta-mozzarella mixture. Garnish with fresh basil or parsley and a sprinkle of Parmesan cheese.
