  • ½ cup (115g) unsalted butter
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ⅓ cup (40g) unsweetened cocoa powder
  • ½ cup (65g) all-purpose flour
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder

For the Cookie Layer:

 

  • ½ cup (115g) unsalted butter, softened
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1½ cups (190g) all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (175g) semisweet chocolate chips

Instructions

 

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
    • Grease a 9×13-inch baking pan or line it with parchment paper.
  2. Prepare the Brownie Layer:
    • In a medium saucepan, melt the butter over medium heat.
    • Remove from heat and stir in the granulated sugar, eggs, and vanilla extract until smooth.
    • Add the cocoa powder, flour, salt, and baking powder; mix until fully combined.
    • Pour the brownie batter into the prepared baking pan, spreading it evenly.
  3. Prepare the Cookie Layer:
    • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
    • Beat in the egg and vanilla extract.
    • In a separate bowl, whisk together the flour, baking soda, and salt.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    • Fold in the chocolate chips.
    • Drop spoonfuls of the cookie dough over the brownie batter, gently spreading to cover the brownie layer.
  4. Bake:
    • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
    • Allow the brookies to cool completely in the pan before cutting into squares.
