Description

Thai Peanut Chicken is a savory and slightly spicy dish featuring tender chicken cooked in a rich, creamy peanut sauce infused with Thai flavors like ginger, garlic, lime, and soy. It’s perfect served over rice or noodles for a comforting meal.


Ingredients

  • 1.5 pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar or lime juice
  • 1 tablespoon brown sugar
  • 1/2 cup coconut milk or water (for thinning sauce)
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 2 green onions, sliced (for garnish)
  • Chopped peanuts and cilantro, for garnish
  • Cooked jasmine rice or noodles, for serving

Instructions

  1. Heat oil in a large skillet over medium heat. Add chicken and cook until browned and cooked through, about 6–8 minutes. Remove and set aside.
  2. In the same skillet, add garlic and ginger. Sauté for 1 minute until fragrant.
  3. Stir in peanut butter, soy sauce, rice vinegar (or lime juice), brown sugar, and coconut milk or water. Mix until smooth and heated through.
  4. Add cooked chicken back to the skillet and toss to coat in the sauce. Simmer for 2–3 minutes to combine flavors.
  5. Serve hot over rice or noodles. Garnish with green onions, chopped peanuts, and cilantro.

Notes

  • Adjust the spice level with more or less red pepper flakes.
  • Use natural peanut butter for a less sweet sauce.
  • Great for meal prep—store in the fridge up to 3 days.
