For the Teriyaki Salmon:
- 4 salmon fillets (6 oz each)
- 1/4 cup soy sauce (low sodium)
- 2 tbsp honey (or brown sugar)
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp water
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1 tsp cornstarch (mixed with 1 tbsp water for thickening)
- 1 tbsp sesame seeds (for garnish)
For the Sushi Bowl:
- 2 cups cooked sushi rice (or jasmine rice)
- 1 tbsp rice vinegar
- 1/2 tsp sugar
- 1/2 tsp salt
- 1 avocado, sliced
- 1 cucumber, sliced
- 1 carrot, julienned
- 1/2 cup edamame (cooked)
- 2 sheets nori, cut into strips
- 2 tbsp green onions, chopped
For the Spicy Mayo (Optional):
- 1/4 cup mayonnaise
- 1 tbsp Sriracha
- 1 tsp lime juice
Instructions
Step 1: Make the Teriyaki Sauce
- In a saucepan over medium heat, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and water.
- Bring to a simmer, then stir in the cornstarch slurry and cook for 1–2 minutes until thickened.
Step 2: Cook the Salmon
- Heat a skillet over medium-high heat and sear the salmon fillets for 3–4 minutes per side.
- Pour the teriyaki sauce over the salmon, spooning it over the fillets as they cook.
Step 3: Prepare the Rice
- In a small bowl, mix cooked sushi rice with rice vinegar, sugar, and salt. Stir to combine.
Step 4: Assemble the Sushi Bowl
- Divide the sushi rice into bowls and top with teriyaki salmon.
- Arrange avocado, cucumber, carrot, edamame, and nori strips around the salmon.
- Drizzle with spicy mayo (if using) and sprinkle with sesame seeds and green onions.

- Serve immediately with extra soy sauce or wasabi on the side!
