  • 4 salmon fillets (6 oz each)
  • 1/4 cup soy sauce (low sodium)

  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tsp cornstarch (mixed with 1 tbsp water for thickening)
  • 1 tbsp sesame seeds (for garnish)

For the Sushi Bowl:

  • 2 cups cooked sushi rice (or jasmine rice)
  • 1 tbsp rice vinegar
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • 1 avocado, sliced
  • 1 cucumber, sliced
  • 1 carrot, julienned
  • 1/2 cup edamame (cooked)
  • 2 sheets nori, cut into strips
  • 2 tbsp green onions, chopped

For the Spicy Mayo (Optional):

  • 1/4 cup mayonnaise
  • 1 tbsp Sriracha
  • 1 tsp lime juice



Instructions

Step 1: Make the Teriyaki Sauce

  1. In a saucepan over medium heat, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and water.
  2. Bring to a simmer, then stir in the cornstarch slurry and cook for 1–2 minutes until thickened.

Step 2: Cook the Salmon

  1. Heat a skillet over medium-high heat and sear the salmon fillets for 3–4 minutes per side.
  2. Pour the teriyaki sauce over the salmon, spooning it over the fillets as they cook.

Step 3: Prepare the Rice

  1. In a small bowl, mix cooked sushi rice with rice vinegar, sugar, and salt. Stir to combine.

Step 4: Assemble the Sushi Bowl

  1. Divide the sushi rice into bowls and top with teriyaki salmon.
  2. Arrange avocado, cucumber, carrot, edamame, and nori strips around the salmon.
  3. Drizzle with spicy mayo (if using) and sprinkle with sesame seeds and green onions.

Step 5: Serve & Enjoy

  1. Serve immediately with extra soy sauce or wasabi on the side!
