Instructions
Prepare the Tater Tots:
- Bake the Tater Tots:
- Preheat your oven and bake the tater tots according to package instructions until golden and crispy. Sprinkle with salt, if desired.
Make the Sausage Gravy:
2. Cook the Sausage:
- In a skillet over medium heat, cook the sausage until browned and crumbled. Remove the cooked sausage with a slotted spoon, leaving the grease in the pan.
-
Make the Roux:
- Add the butter to the skillet. Once melted, stir in the flour and cook for 1–2 minutes, whisking constantly, to form a roux.
-
Add the Milk:
- Gradually whisk in the milk, cooking until the gravy thickens. Stir in the cooked sausage and season with black pepper and salt. Keep warm.
Cook the Eggs:
5. Scramble the Eggs:
- In a bowl, whisk together the eggs, milk or cream, and a pinch of salt and pepper.
- Melt butter in a nonstick skillet over medium heat. Add the eggs and cook gently, stirring frequently, until fluffy and just set.
Assemble the Bowls:
6. Layer the Ingredients:
- Divide the crispy tater tots among bowls. Top with scrambled eggs, a generous scoop of sausage gravy, and shredded cheddar cheese.
- Garnish and Serve:
- Garnish with chopped green onions and a drizzle of hot sauce, if desired. Serve immediately.
Notes
- For extra flavor, mix in sautéed peppers or onions with the eggs.
- Make it vegetarian by substituting sausage with plant-based crumbles or mushrooms.
- Store leftovers separately and reheat before assembling.
