  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 cup shredded cheddar or Mexican blend cheese
  • 2 cups crushed Nacho Cheese Doritos
  • 1/2 cup salsa
  • 1/2 cup sour cream

  • Shredded lettuce
  • Diced avocado or guacamole
  • Sliced green onions

Instructions

  • Cook the Ground Beef:

    • In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
    • Add the taco seasoning and 1/2 cup water, stirring to combine. Simmer for 5 minutes until thickened.
  • Prepare the Bowls:

    • Divide the cooked rice evenly between 4 bowls.
    • Top each bowl with a portion of the taco-seasoned ground beef.
    • Add black beans, corn, and shredded cheese over the beef layer.
  • Add the Doritos and Toppings:

    • Sprinkle each bowl with a generous handful of crushed Doritos.
    • Add a spoonful of salsa and a dollop of sour cream to each bowl.
    • Garnish with fresh cilantro and any additional toppings you like.
  • Serve:

    • Serve immediately and enjoy with extra Doritos on the side if desired!

Notes

  • Make it spicy: Add diced jalapeños or use a spicy salsa for a kick.
  • Use chicken or turkey: Substitute the ground beef with shredded chicken or ground turkey for a lighter option.
  • Make it vegetarian: Omit the meat and add more beans, corn, or sautéed veggies like bell peppers.
