Description

Taco Potatoes are a hearty and satisfying dish that combines crispy baked or roasted potatoes with flavorful taco-seasoned beef, cheese, and all your favorite taco toppings. Perfect for a fun family dinner or game day treat.


Ingredients

  • 4 medium russet potatoes, scrubbed and pierced with a fork
  • 1 lb ground beef
  • 1 packet taco seasoning mix (or 2 tbsp homemade seasoning)
  • 2/3 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup salsa or pico de gallo
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup shredded lettuce (optional)
  • 1/4 cup sliced black olives or jalapeños (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Bake potatoes for 45–60 minutes, or until fork-tender. Alternatively, microwave for 10–12 minutes.
  2. While potatoes cook, brown ground beef in a skillet over medium heat. Drain excess fat.
  3. Add taco seasoning and water to the beef. Simmer for 5–7 minutes until thickened.
  4. Once potatoes are done, let cool slightly, then slice open and fluff the insides with a fork.
  5. Spoon taco meat over each potato and top with shredded cheese.
  6. Return to oven for 5 minutes or until cheese is melted.
  7. Top with sour cream, salsa, green onions, cilantro, and any other desired toppings.
  8. Serve hot and enjoy!

Notes

  • Substitute ground turkey or black beans for a lighter or vegetarian version.
