This taco meatloaf takes classic comfort food to the next level with bold Mexican flavors. Juicy ground beef is mixed with taco spices, cheese, and salsa, then baked to perfection. Serve it with a dollop of sour cream or guacamole for a fun and flavorful twist on traditional meatloaf!

  • 1 pound ground beef (80/20 or leaner)
  • 1 pound ground pork or ground turkey (optional, for a mix)
  • 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
  • 1/2 cup crushed tortilla chips (or breadcrumbs)
  • 1 cup shredded Mexican cheese blend
  • 1/2 cup salsa
  • 1/4 cup diced onion
  • 1/4 cup chopped cilantro (optional)
  • 2 large eggs
  • 1/4 cup sour cream (optional, for added moisture)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Topping:
    • 1/2 cup salsa
    • 1/2 cup shredded Mexican cheese blend

Instructions

 

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or grease a loaf pan.
  2. Prepare the Mixture: In a large bowl, combine ground beef, ground pork or turkey (if using), taco seasoning, crushed tortilla chips, 1 cup of shredded cheese, 1/2 cup salsa, diced onion, cilantro (if using), eggs, sour cream (optional), salt, and pepper. Mix gently until just combined.
  3. Form the Meatloaf: Shape the meat mixture into a loaf on the prepared baking sheet or press it into a greased loaf pan.
  4. Add Topping: Spread 1/2 cup salsa over the top of the meatloaf, then sprinkle with 1/2 cup shredded cheese.
  5. Bake: Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 160°F (71°C) for beef or 165°F (74°C) for turkey or pork.
  6. Rest and Serve: Allow the meatloaf to rest for 10 minutes before slicing. Serve with additional toppings like sour cream, guacamole, or chopped cilantro.

Notes

  • For a spicier kick, use medium or hot salsa and add diced jalapeños to the meat mixture.
