This homemade version of Taco Bell’s Mexican Pizza features crispy flour tortillas layered with seasoned beef, refried beans, taco sauce, and a blend of melted cheeses. It’s simple to make, fun to assemble, and packed with Tex-Mex flavors.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 3/4 cup water
  • 8 (8-inch) flour tortillas
  • 1 can (16 oz) refried beans, warmed
  • 3/4 cup taco sauce (or enchilada sauce)
  • 1 1/2 cups shredded Mexican cheese blend
  • 1/2 cup diced tomatoes
  • Optional toppings: sliced black olives, chopped green onions, sour cream, guacamole

Instructions

  • Prepare the Beef: In a large skillet over medium heat, cook the ground beef until fully browned, breaking it into crumbles. Drain excess fat. Add taco seasoning and water, stirring well. Simmer for 2-3 minutes, until the mixture thickens slightly.
  • Crisp the Tortillas: In a skillet, add a small amount of oil over medium heat. Fry each tortilla for about 30 seconds per side until golden and crispy. Drain on paper towels and set aside. (Alternatively, bake them in the oven at 400°F for 5-7 minutes, flipping once.)
  • Assemble the Pizzas:
    • Place one tortilla on a baking sheet lined with parchment paper.
    • Spread a thin layer of refried beans over the tortilla, then add a layer of seasoned beef.
    • Top with a second tortilla and spread taco sauce on top. Sprinkle with a generous layer of cheese.
  • Bake: Preheat your oven’s broiler. Place the assembled pizzas under the broiler for 1-2 minutes or until the cheese is melted and bubbly.
  • Garnish and Serve: Remove from the oven and top with diced tomatoes, black olives, and green onions as desired. Serve hot with sour cream and guacamole on the side.

Notes

 

  • Storage: Leftovers can be stored in the fridge for up to 3 days. Reheat in the oven to retain crispiness.
  • Customization: Feel free to add jalapeños, extra cheese, or swap in ground turkey for a lighter version.
