Sweet Chili Chicken is a flavorful dish that combines crispy chicken pieces with a sticky, sweet, and tangy chili sauce. It’s quick to make and perfect served over rice or with stir-fried vegetables.

- 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1/4 cup cornstarch
- Salt and pepper, to taste
- 2 tbsp vegetable oil
- 1 tbsp green onions, for garnish (optional)
- Sesame seeds, for garnish (optional)
- For the Sweet Chili Sauce:
- 1/3 cup Thai sweet chili sauce
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 2 cloves garlic, minced
- 1 tsp grated ginger
Instructions
- In a bowl, toss chicken pieces with cornstarch, salt, and pepper until evenly coated.
- Heat vegetable oil in a large skillet over medium-high heat. Add chicken and cook for 6-8 minutes until golden and cooked through. Remove and set aside.
- In the same skillet, add garlic and ginger, sauté for 1 minute until fragrant.
- Add sweet chili sauce, soy sauce, rice vinegar, and honey. Stir and bring to a simmer.
- Return the chicken to the skillet and toss to coat in the sauce. Cook for another 2-3 minutes until sauce thickens and clings to the chicken.
- Garnish with sesame seeds and green onions if desired. Serve hot over rice or noodles.
Notes
- For extra crunch, coat chicken in flour and breadcrumbs before frying.
- Adjust sweetness or spice by varying the amount of honey or chili sauce.
- Goes well with steamed broccoli or snap peas.
