These Sweet and Spicy Grilled Chicken and Pineapple Skewers are the perfect summer treat, combining juicy grilled chicken with caramelized pineapple and a flavorful marinade.

- 1 1/2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 cups fresh pineapple chunks
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp sriracha sauce (adjust to taste)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- 1/2 tsp black pepper
- 1 tbsp lime juice
- Wooden or metal skewers
Instructions
- In a medium bowl, whisk together soy sauce, honey, sriracha, olive oil, garlic, ginger, black pepper, and lime juice.
- Add chicken cubes to the marinade, toss to coat, and refrigerate for at least 30 minutes (up to 2 hours).
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Preheat grill to medium-high heat.
- Thread chicken and pineapple chunks alternately onto skewers.
- Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
- Brush remaining marinade on skewers during grilling for extra flavor (if desired).
- Remove from grill and let rest for a few minutes before serving.
Notes
- You can substitute chicken thighs for a juicier option.
- Adjust the sriracha to control spice level.
- Serve with rice or a fresh salad for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
