Instructions

  1. Prepare the Cookie Dough:
    • Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
    • In a large mixing bowl, cream the butter and sugar together until light and fluffy.
    • Beat in the egg and vanilla extract until smooth.
    • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
  2. Shape and Bake the Cookie Cups:
    • Roll the dough into 1-inch balls and place one ball in each cavity of the mini muffin tin.
    • Use your thumb or the back of a measuring spoon to press down the center of each ball, creating a cup shape.
    • Bake for 10–12 minutes, or until the edges are lightly golden.
    • Remove from the oven and immediately press down the centers again to reinforce the cup shape. Allow the cookie cups to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  3. Fill the Cookie Cups:
    • Once the cookie cups are cool, pipe or spoon your desired filling into each cup. Frosting, ganache, or fruit preserves all work beautifully.
  4. Decorate:
    • Add sprinkles, mini chocolate chips, fresh fruit, or any toppings you like.
  5. Serve:
    • Serve immediately or store in an airtight container until ready to enjoy.
