Ingredients
For the Sugar Cookie Layer:
- 1 package (16.5 oz) refrigerated sugar cookie dough (or homemade dough)
For the Cheesecake Layer:
- 16 oz (2 blocks) cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg

- Sprinkles
- Powdered sugar for dusting
- Drizzle of melted white chocolate

Preheat Oven:
Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or lightly grease it. -
Prepare the Sugar Cookie Base:
Press the sugar cookie dough evenly into the bottom of the baking dish to form a smooth layer. -
Make the Cheesecake Filling:
In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Add sugar, vanilla extract, and the egg, then mix until creamy and well combined. -
Assemble the Bars:
Pour the cheesecake mixture over the sugar cookie layer and spread evenly with a spatula. Add sprinkles on top if desired. -
Bake:
Bake for 30–35 minutes or until the cheesecake layer is set and the edges of the cookie crust are golden. -
Cool and Chill:
Let the bars cool to room temperature, then refrigerate for at least 2 hours (or overnight) to firm up. -
Serve:
Slice into squares and dust with powdered sugar or drizzle with melted white chocolate before serving.

- Use homemade sugar cookie dough if you prefer a from-scratch version.
