  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 2 1/2 cups (310g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

For the Frosting:

  • 1/2 cup (113g) unsalted butter, softened
  • 3 cups (360g) powdered sugar
  • 2 tablespoons (30ml) milk
  • 1 teaspoon vanilla extract
  • Food coloring (optional)
  • Sprinkles (optional)

Instructions

Make the Bars:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs and vanilla extract, beating until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Press the dough evenly into the prepared baking dish. Smooth the surface with a spatula or your hands.
  5. Bake for 18–20 minutes, or until the edges are lightly golden. Do not overbake; the bars should remain soft. Allow the bars to cool completely in the pan.

Make the Frosting:

  1. In a medium bowl, beat the butter until creamy. Gradually add the powdered sugar, milk, and vanilla extract, beating until smooth and fluffy. Add food coloring, if desired.

Assemble:

  1. Spread the frosting evenly over the cooled cookie bars. Top with sprinkles if using.
  2. Slice into squares or rectangles and serve.
