For the Bars:
- 1 cup (227g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 2 1/2 cups (310g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
For the Frosting:
- 1/2 cup (113g) unsalted butter, softened
- 3 cups (360g) powdered sugar
- 2 tablespoons (30ml) milk
- 1 teaspoon vanilla extract
- Food coloring (optional)
- Sprinkles (optional)
Instructions
Make the Bars:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs and vanilla extract, beating until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Press the dough evenly into the prepared baking dish. Smooth the surface with a spatula or your hands.
- Bake for 18–20 minutes, or until the edges are lightly golden. Do not overbake; the bars should remain soft. Allow the bars to cool completely in the pan.
Make the Frosting:
- In a medium bowl, beat the butter until creamy. Gradually add the powdered sugar, milk, and vanilla extract, beating until smooth and fluffy. Add food coloring, if desired.
Assemble:
- Spread the frosting evenly over the cooled cookie bars. Top with sprinkles if using.
- Slice into squares or rectangles and serve.
