Instructions

Step 1: Make the Cream Cheese Filling

  1. In a small bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Scoop ½ teaspoon-sized portions onto a parchment-lined plate and freeze for 20-30 minutes.

Step 2: Prepare the Cookie Dough

  1. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  2. In a large bowl, beat butter, granulated sugar, and brown sugar until fluffy.
  3. Mix in egg, lemon zest, lemon juice, vanilla extract, and food coloring (if using).
  4. Gradually add the dry ingredients, mixing until a soft dough forms.
  5. Cover and chill for 30 minutes for easier handling.

Step 3: Assemble the Stuffed Cookies

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
