Description

These Strawberry Truffles are creamy, sweet bites of heaven with real strawberry flavor. Made with white chocolate and fresh or freeze-dried strawberries, they’re perfect for gifting, Valentine’s Day, or whenever you want a quick and elegant treat.


Ingredients

  • 1 cup (180g) white chocolate chips or chopped white chocolate
  • 1/4 cup (60ml) heavy cream
  • 2 tbsp (30g) unsalted butter
  • 1/4 cup (15g) freeze-dried strawberries, crushed into powder (or 2 tbsp strawberry jam for fresh flavor)
  • 1/2 tsp vanilla extract
  • Pinch of salt

For Coating:

  • 1/2 cup (75g) freeze-dried strawberries, crushed
  • 1/2 cup (100g) white chocolate, melted (optional, for dipping)

Instructions

  1. Make the Strawberry Ganache:
    • In a small saucepan, heat the heavy cream and butter over medium heat until steaming (but not boiling).
    • Pour the hot cream mixture over the white chocolate in a heatproof bowl. Let it sit for 1 minute, then stir until smooth.
    • Add the strawberry powder (or jam), vanilla extract, and salt. Mix well.
  2. Chill the Mixture:
    • Cover the bowl with plastic wrap and refrigerate for 1-2 hours, or until the ganache is firm enough to scoop.
  3. Shape the Truffles:
    • Scoop tablespoon-sized portions of the ganache and roll them into balls with your hands.
    • Place the balls on a parchment-lined baking sheet and chill in the refrigerator for 15-20 minutes to firm up.
  4. Coat the Truffles:
    • Roll each truffle in the crushed freeze-dried strawberries for a vibrant pink coating.
    • Optionally, dip the truffles in melted white chocolate before rolling in the strawberry powder for an extra layer of sweetness.
  5. Serve:
    • Store the truffles in an airtight container in the refrigerator for up to 1 week. Serve chilled or at room temperature.

Notes

  • For a smoother coating, sift the freeze-dried strawberry powder before rolling the truffles.
  • If you prefer a darker contrast, coat the truffles in cocoa powder or drizzle with dark chocolate.
  • These truffles can be frozen for up to 2 months; thaw in the refrigerator before serving.
