- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 tablespoon vanilla extract
- 1 cup whole milk
- 3 cups fresh strawberries, sliced
- 2 tablespoons sugar (for macerating strawberries)
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract (for whipped cream)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream the butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
- Alternately add flour mixture and milk to the butter mixture, beginning and ending with flour. Mix until just combined.
- Divide batter evenly between prepared pans and bake for 25–30 minutes, or until a toothpick inserted comes out clean. Let cakes cool completely.
- In a medium bowl, toss sliced strawberries with 2 tablespoons sugar and set aside to macerate for at least 20 minutes.
- In a separate bowl, beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
- To assemble, place one cake layer on a serving plate. Spread with whipped cream and top with half the strawberries.
- Add the second cake layer, then top with more whipped cream and the remaining strawberries.
- Refrigerate for at least 1 hour before serving to allow the flavors to meld.
Notes
- Use cake flour for an even lighter texture if preferred.
- Best served within 24 hours of assembling.
- Try adding a layer of strawberry jam for extra flavor.
