These Strawberry Oatmeal Bars are soft, chewy, and bursting with fresh strawberry flavor! Made with wholesome oats and a buttery crumb topping, they make a perfect breakfast, snack, or healthy dessert.

For the Oat Crust & Topping:
- 1 1/2 cups (120 g) rolled oats
- 1 cup (125 g) all-purpose flour (or whole wheat flour)
- 1/2 cup (100 g) brown sugar
- 1/2 teaspoon cinnamon (optional)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (115 g) butter, melted
- 1 teaspoon vanilla extract
For the Strawberry Filling:
- 2 cups fresh strawberries, diced (or frozen, thawed and drained)
- 2 tablespoons honey or maple syrup
- 1 tablespoon cornstarch (for thickening)
- 1 teaspoon lemon juice
Instructions
1️⃣ Preheat & Prep
- Preheat oven to 350°F (175°C).
- Line an 8×8-inch baking dish with parchment paper and lightly grease it.
2️⃣ Make the Oat Crust
- In a large bowl, mix oats, flour, brown sugar, cinnamon, baking soda, and salt.
- Stir in melted butter and vanilla extract until crumbly.
3️⃣ Prepare the Strawberry Filling
- In a bowl, mix strawberries, honey (or maple syrup), cornstarch, and lemon juice.
4️⃣ Assemble the Bars
- Press ⅔ of the oat mixture firmly into the bottom of the pan.
- Spread the strawberry filling evenly over the crust.
- Sprinkle the remaining oat mixture on top.
5️⃣ Bake & Cool
- Bake for 30-35 minutes, until golden brown and bubbly.
- Let cool completely before cutting into squares.
6️⃣ Serve & Enjoy!
- Enjoy warm or chilled, with a drizzle of honey or a scoop of vanilla yogurt!
Notes
🌰 Nutty Version? Add ½ cup chopped almonds or pecans to the topping.
