Description
Strawberry Mousse is a light, airy dessert made with fresh strawberries, whipped cream, and gelatin for a smooth and fruity treat that’s perfect for spring and summer.

- 2 cups fresh strawberries, hulled and chopped
- 1/3 cup granulated sugar
- 1 tbsp lemon juice
- 1 tbsp unflavored gelatin
- 2 tbsp cold water
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- Fresh strawberries and mint leaves for garnish (optional)
Instructions
- In a blender or food processor, purée the strawberries with granulated sugar and lemon juice until smooth.
- In a small bowl, sprinkle gelatin over cold water and let sit for 5 minutes to bloom.
- Transfer the strawberry purée to a saucepan and heat gently over medium heat. Stir in the bloomed gelatin until completely dissolved. Remove from heat and let cool to room temperature.
- In a separate bowl, beat the heavy whipping cream with powdered sugar until soft peaks form.
- Gently fold the cooled strawberry mixture into the whipped cream until fully combined and smooth.
- Spoon or pipe the mousse into serving glasses and refrigerate for at least 2–3 hours, or until set.
- Garnish with fresh strawberries and mint leaves before serving, if desired.
Notes
- Make sure the strawberry mixture is completely cool before folding into whipped cream to avoid deflating.
- Use a fine mesh sieve to strain the purée for an extra smooth mousse.
- Can be made a day ahead and kept refrigerated until serving.
- For a lighter version, substitute Greek yogurt for half the whipped cream.
