Description

Strawberry Mousse is a light, airy dessert made with fresh strawberries, whipped cream, and gelatin for a smooth and fruity treat that’s perfect for spring and summer.


Ingredients

  • 2 cups fresh strawberries, hulled and chopped
  • 1/3 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp unflavored gelatin
  • 2 tbsp cold water
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • Fresh strawberries and mint leaves for garnish (optional)

Instructions

  1. In a blender or food processor, purée the strawberries with granulated sugar and lemon juice until smooth.
  2. In a small bowl, sprinkle gelatin over cold water and let sit for 5 minutes to bloom.
  3. Transfer the strawberry purée to a saucepan and heat gently over medium heat. Stir in the bloomed gelatin until completely dissolved. Remove from heat and let cool to room temperature.
  4. In a separate bowl, beat the heavy whipping cream with powdered sugar until soft peaks form.
  5. Gently fold the cooled strawberry mixture into the whipped cream until fully combined and smooth.
  6. Spoon or pipe the mousse into serving glasses and refrigerate for at least 2–3 hours, or until set.
  7. Garnish with fresh strawberries and mint leaves before serving, if desired.

Notes

  • Make sure the strawberry mixture is completely cool before folding into whipped cream to avoid deflating.
  • Use a fine mesh sieve to strain the purée for an extra smooth mousse.
  • Can be made a day ahead and kept refrigerated until serving.
  • For a lighter version, substitute Greek yogurt for half the whipped cream.
