Description

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
  5. Mix tequila, mango puree, strawberry puree, and buttermilk in a separate bowl.
  6. Alternately add dry ingredients and wet ingredients to the butter mixture, beginning and ending with dry ingredients.
  7. Divide batter evenly among cupcake liners, filling each about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Cool completely.
  9. For the frosting, beat softened butter until creamy, then gradually add powdered sugar, lime juice, tequila, and lime zest until smooth and fluffy.
  10. Frost cooled cupcakes and garnish with extra lime zest or small fruit slices if desired.
