Instructions
- Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
- Mix tequila, mango puree, strawberry puree, and buttermilk in a separate bowl.
- Alternately add dry ingredients and wet ingredients to the butter mixture, beginning and ending with dry ingredients.
- Divide batter evenly among cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Cool completely.
- For the frosting, beat softened butter until creamy, then gradually add powdered sugar, lime juice, tequila, and lime zest until smooth and fluffy.
- Frost cooled cupcakes and garnish with extra lime zest or small fruit slices if desired.
