Strawberry Lemon Blondies are soft, chewy dessert bars infused with fresh strawberries and zesty lemon flavor, topped with a tangy lemon glaze.

- 1 cup fresh strawberries, diced
- 1 tbsp lemon juice
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tbsp lemon zest
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup powdered sugar (for glaze)
- 1 tbsp lemon juice (for glaze)
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a small bowl, toss the diced strawberries with 1 tbsp lemon juice and set aside.
- In a large bowl, whisk together the melted butter and granulated sugar until smooth.
- Add in the egg, vanilla extract, and lemon zest, and mix well.
- Stir in the flour, baking powder, and salt until just combined.
- Gently fold in the strawberries.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25–30 minutes or until the top is set and edges are golden brown. Let cool completely.
- In a small bowl, mix powdered sugar with 1 tbsp lemon juice to form a glaze. Drizzle over cooled blondies.
- Cut into squares and serve.
Notes
- Ensure strawberries are not too wet to prevent excess moisture in the batter.
- Store in an airtight container in the fridge for up to 3 days.
- For extra flavor, add a few drops of lemon extract to the batter.
