Description

Strawberry Lemon Blondies are soft, chewy dessert bars infused with fresh strawberries and zesty lemon flavor, topped with a tangy lemon glaze.


Ingredients

  • 1 cup fresh strawberries, diced
  • 1 tbsp lemon juice
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup powdered sugar (for glaze)
  • 1 tbsp lemon juice (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a small bowl, toss the diced strawberries with 1 tbsp lemon juice and set aside.
  3. In a large bowl, whisk together the melted butter and granulated sugar until smooth.
  4. Add in the egg, vanilla extract, and lemon zest, and mix well.
  5. Stir in the flour, baking powder, and salt until just combined.
  6. Gently fold in the strawberries.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 25–30 minutes or until the top is set and edges are golden brown. Let cool completely.
  9. In a small bowl, mix powdered sugar with 1 tbsp lemon juice to form a glaze. Drizzle over cooled blondies.
  10. Cut into squares and serve.

Notes

  • Ensure strawberries are not too wet to prevent excess moisture in the batter.
  • Store in an airtight container in the fridge for up to 3 days.
  • For extra flavor, add a few drops of lemon extract to the batter.
