Description

Strawberry Jello Cake is a classic retro dessert that layers moist white or yellow cake with a vibrant strawberry gelatin infusion, often finished with whipped topping and fresh strawberries. This chilled dessert is renowned for its vivid color, refreshing taste, and crowd-pleasing appeal, especially in warmer months.

Ingredients

Units Scale
  • 1 box white or yellow cake mix (plus ingredients listed on box: eggs, oil, water)
  • 1 (3 oz) package strawberry Jell-O
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 (8 oz) container whipped topping (like Cool Whip)
  • 1 cup fresh strawberries, sliced (for topping)
  • Optional: additional strawberries or mint leaves for garnish

Instructions

  1. Prepare and bake the cake in a 9×13-inch pan according to the instructions on the box. Allow to cool slightly after baking.
  2. Using a fork or skewer, poke holes all over the top of the cake while it is still warm but not hot.
  3. In a medium bowl, dissolve the strawberry Jell-O in 1 cup boiling water. Stir in 1/2 cup cold water until fully combined.
  4. Carefully pour the Jell-O mixture evenly over the cake, allowing it to seep into the holes. Refrigerate for at least 3 hours or until fully set.
  5. Once chilled and set, spread whipped topping evenly over the cake surface.
  6. Top with fresh sliced strawberries before serving. Optionally garnish with whole strawberries or mint leaves for presentation.

Notes

  • For intensified strawberry flavor, fold pureed or finely chopped strawberries into the Jell-O mixture before pouring.
  • Allow ample chilling time to ensure the gelatin fully integrates with the cake structure.
  • Best served cold; store leftovers in the refrigerator for up to 3 days.
