These Strawberry Frosted Cherry Cookies are a delightful fusion of sweet cherries and vibrant strawberry frosting. The soft, chewy cookies are studded with maraschino cherries and topped with a luscious strawberry-flavored icing, making them perfect for any occasion.

For the Cookies:

  • 2½ cups all-purpose flour

  • 3 cups powdered sugar
  • ¼ cup freeze-dried strawberries, finely ground into powder
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  • Prepare the Cookies:
    • Preheat the oven to 375°F (190°C). Line baking sheets with parchment paper.
    • In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
    • In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
    • Beat in the egg and vanilla extract until well combined.
    • Mix in the sour cream until smooth.
    • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
    • Gently fold in the chopped maraschino cherries.
    • Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
    • Bake for 10-12 minutes, or until the edges are lightly golden.
    • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  • Prepare the Strawberry Frosting:
    • In a large bowl, beat the softened butter until creamy.
    • Gradually add the powdered sugar and ground freeze-dried strawberries, mixing on low speed until combined.
    • Add the milk and vanilla extract, increasing the speed to medium-high, and beat until the frosting is light and fluffy.
    • If the frosting is too thick, add additional milk, one teaspoon at a time, until the desired consistency is reached.
  • Assemble the Cookies:
    • Once the cookies have cooled completely, spread or pipe the strawberry frosting onto each cookie.
    • Allow the frosting to set before serving.

Notes

  • Ensure the maraschino cherries are well-drained and patted dry to prevent excess moisture in the dough.
  • For a more intense strawberry flavor, add an extra tablespoon of ground freeze-dried strawberries to the frosting.
