- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg

For the Strawberry Frosting:
- 1/2 cup unsalted butter, softened
- 3 cups powdered sugar
- 1/4 cup freeze-dried strawberries, finely ground into powder
- 2 tablespoons milk
- 1 teaspoon vanilla extract
Instructions
- Prepare the Cookies:
- Preheat the oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
- In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Mix in the sour cream until smooth.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Gently fold in the chopped maraschino cherries.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Prepare the Strawberry Frosting:
- In a large bowl, beat the softened butter until creamy.
- Gradually add the powdered sugar and ground freeze-dried strawberries, mixing on low speed until combined.
- Add the milk and vanilla extract, increasing the speed to medium-high, and beat until the frosting is light and fluffy.
- If the frosting is too thick, add additional milk, one teaspoon at a time, until the desired consistency is reached.
- Assemble the Cookies:
- Once the cookies have cooled completely, spread or pipe the strawberry frosting onto each cookie.
- Allow the frosting to set before serving.
Notes
- Ensure the maraschino cherries are well-drained and patted dry to prevent excess moisture in the dough.
- For a more intense strawberry flavor, add an extra tablespoon of ground freeze-dried strawberries to the frosting.
- Store the cookies in an airtight container at room temperature for up to 3 days.
