Description

Sweet and buttery strawberry crumb bars with a jammy fruit filling and a golden, crumbly topping — perfect for dessert or a summer snack.


Ingredients

  • 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 cups fresh strawberries, hulled and chopped
  • 1 tbsp cornstarch
  • 2 tbsp lemon juice
  • 1/3 cup granulated sugar (for strawberry filling)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper and lightly grease.
  2. In a large bowl, mix melted butter, 1 cup granulated sugar, brown sugar, and vanilla until combined.
  3. Stir in flour, baking powder, and salt until a crumbly dough forms.
  4. Press 2/3 of the dough into the bottom of the prepared pan to form the crust.
  5. In a medium bowl, combine chopped strawberries, cornstarch, lemon juice, and 1/3 cup sugar. Mix well.
  6. Spread the strawberry mixture evenly over the crust.
  7. Sprinkle the remaining dough over the strawberry layer to form the crumb topping.
  8. Bake for 35–40 minutes, or until the top is lightly golden and the filling is bubbly.
  9. Let cool completely in the pan before cutting into bars.

Notes

  • These bars can be made with frozen strawberries — just thaw and drain excess liquid first.
  • Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
  • Try substituting strawberries with raspberries or a berry mix for a variation.
