- 1 cup unsalted butter, melted
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- 3 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 cups fresh strawberries, hulled and chopped
- 1 tbsp cornstarch
- 2 tbsp lemon juice
- 1/3 cup granulated sugar (for strawberry filling)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper and lightly grease.
- In a large bowl, mix melted butter, 1 cup granulated sugar, brown sugar, and vanilla until combined.
- Stir in flour, baking powder, and salt until a crumbly dough forms.
- Press 2/3 of the dough into the bottom of the prepared pan to form the crust.
- In a medium bowl, combine chopped strawberries, cornstarch, lemon juice, and 1/3 cup sugar. Mix well.
- Spread the strawberry mixture evenly over the crust.
- Sprinkle the remaining dough over the strawberry layer to form the crumb topping.
- Bake for 35–40 minutes, or until the top is lightly golden and the filling is bubbly.
- Let cool completely in the pan before cutting into bars.
Notes
- These bars can be made with frozen strawberries — just thaw and drain excess liquid first.
- Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
- Try substituting strawberries with raspberries or a berry mix for a variation.
