Instructions

  1. Prepare the Strawberry Puree:
    • Blend the fresh strawberries into a smooth puree using a blender or food processor. If the puree seems watery, simmer it in a small saucepan over medium heat for 5–7 minutes until slightly thickened, then let cool completely.
  2. Beat the Cream Cheese and Butter:
    • In a large mixing bowl, use a hand mixer or stand mixer to beat the softened cream cheese and butter together until smooth and creamy, about 2–3 minutes.
  3. Add the Strawberry Puree:
    • Gradually mix in the cooled strawberry puree and vanilla extract until fully incorporated.
  4. Add the Powdered Sugar:
    • Gradually add the sifted powdered sugar, 1 cup at a time, mixing on low speed until the frosting reaches your desired consistency. Add a pinch of salt to balance the sweetness.
  5. Adjust Consistency (if needed):
