Instructions

  1. Make the Cookie Dough:
    • In a large bowl, cream the butter and sugar together until light and fluffy, about 2–3 minutes.
    • Add the egg yolk and vanilla extract, mixing until combined.
    • Gradually mix in the flour and salt until a soft dough forms.
  2. Chill the Dough:
    • Wrap the dough in plastic wrap and refrigerate for 30 minutes to 1 hour, or until firm enough to handle.
  3. Shape the Cookies:
    • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
    • Roll the dough into 1-inch balls and place them on the baking sheets about 2 inches apart.
    • Use your thumb or the back of a small spoon to press an indentation into the center of each cookie.
  4. Fill and Bake:
    • Fill each indentation with a small amount of strawberry jam (about ½ teaspoon).
    • Bake for 12–14 minutes, or until the edges are set and lightly golden.
    • Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  5. Add the Chocolate Drizzle:
    • Melt the chocolate chips and coconut oil in the microwave in 20-second intervals, stirring until smooth.
