For the Cookies:

- 2/3 cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract

For the Filling and Topping:
- 1/3 cup strawberry jam or preserves
- 1/2 cup semi-sweet chocolate chips
- 1 teaspoon coconut oil or vegetable oil
Instructions
- Make the Cookie Dough:
- In a large bowl, cream the butter and sugar together until light and fluffy, about 2–3 minutes.
- Add the egg yolk and vanilla extract, mixing until combined.
- Gradually mix in the flour and salt until a soft dough forms.
- Chill the Dough:
- Wrap the dough in plastic wrap and refrigerate for 30 minutes to 1 hour, or until firm enough to handle.
- Shape the Cookies:
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll the dough into 1-inch balls and place them on the baking sheets about 2 inches apart.
- Use your thumb or the back of a small spoon to press an indentation into the center of each cookie.
- Fill and Bake:
- Fill each indentation with a small amount of strawberry jam (about ½ teaspoon).
- Bake for 12–14 minutes, or until the edges are set and lightly golden.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Add the Chocolate Drizzle:
- Melt the chocolate chips and coconut oil in the microwave in 20-second intervals, stirring until smooth.
- Drizzle the melted chocolate over the cooled cookies using a spoon or piping bag. Let the chocolate set before serving.
