Description

For the cookies:

  • 1 cup (225 g) unsalted butter, softened
  • 1/2 cup (60 g) powdered sugar
  • 1 tsp vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1/4 tsp salt
  • 1/4 cup (30 g) freeze-dried strawberries, finely ground
  • 1/2 cup (90 g) mini chocolate chips

For the coating:

  • 1 cup (120 g) powdered sugar

Instructions

1. Prepare the dough:

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, beat the butter and powdered sugar together until light and creamy. Add the vanilla extract and mix well.
  • In a separate bowl, whisk together the flour, salt, and ground freeze-dried strawberries. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the mini chocolate chips.

2. Shape the cookies:

  • Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart.

3. Bake the cookies:

  • Bake for 12–15 minutes, or until the bottoms are lightly golden. The tops of the cookies will remain pale.

4. Coat in powdered sugar:

  • Allow the cookies to cool for about 5 minutes, then roll them in powdered sugar while still warm.
  • Let them cool completely, then roll them in powdered sugar again for a thicker, snowy coating.

5. Serve and enjoy:

  • Store in an airtight container at room temperature for up to 5 days.



Notes

  • Freeze-Dried Strawberries: You can find these in most grocery stores. Pulse them in a food processor or crush them in a bag to make a fine powder.
  • Optional Additions: Add a few drops of strawberry extract for extra flavor or drizzle melted chocolate on top for decoration.
