Description

These dessert quesadillas are stuffed with a rich cream cheese filling and sweet strawberries, then toasted to golden perfection in a skillet. Finished with a dusting of cinnamon sugar, they taste like cheesecake meets churros – quick, fun, and delicious!


Ingredients

  • 4 small flour tortillas

  • 4 oz cream cheese, softened

  • 2 tbsp granulated sugar

  • 1/2 tsp vanilla extract

  • 1/2 cup fresh strawberries, diced

  • 2 tbsp butter, softened

  • 1 tsp sugar + 1/2 tsp cinnamon (for topping)

  • Optional: whipped cream, chocolate sauce, or strawberry jam for serving

 



Instructions

  1. Make the filling:
    In a bowl, beat together cream cheese, sugar, and vanilla until smooth.

  2. Assemble:
    Spread cream cheese mixture over two tortillas. Sprinkle diced strawberries evenly on top. Place remaining tortillas over each to form two quesadillas.

  3. Cook:
    Heat a skillet over medium heat. Butter one side of each quesadilla and place butter-side down in the skillet. Cook 2–3 minutes per side until golden and crisp, flipping carefully.

  4. Finish:
    Mix cinnamon and sugar together. Sprinkle over warm quesadillas. Let cool slightly, then cut into wedges.

  5. Serve:
    Serve warm with whipped cream, strawberry sauce, or a drizzle of chocolate if desired.


Notes

  • You can sub in other fruits like blueberries or sliced bananas.

  • These are best served fresh while warm and crispy.
